    One of our  favorite Continental Breakfast goodies:

Cathey's Fruit Muffins:
1 cup Unbleached White Flour
3/4 cup Whole Wheat Pastry Flour
2 1/2 tsp. baking powder               
3/4 tsp. salt

Preheat oven to 400oF.  Prepare muffin tins by lining with your preferred method.

Stir well, flours with sugar, baking powder and salt in bowl.  In a another bowl combine egg, milk, sugar and oil.  Add all at once to dry ingredients; stir until dry ingredients are moistened.  Fold in prepared berries.  Spoon batter into muffin tins, at least 3/4 full.

Bake 25 minutes until tops are golden brown.  Yield 12 regular muffins; 6 large.





1 egg, well beaten
3/4 cup milk
1/4 cup sugar
1/3 cup vegetable oil
1 cup fresh or frozen berries

Toss berries with 2 Tbsp. sugar and 1 Tbsp. white flour - set aside. (We prefer half blueberries, half raspberries)
